    Local Favorite O Happy Bread Bakery Expands and Flourishes Under New Ownership

    O Happy Bread Bakery and Café, a charming French bakery located at 1231 E Basin Ave Suites 7- 8, has been under the ownership of Dave Grant and his wife for the past two years. Since taking over, Dave has focused on preserving the authentic French experience that initially captivated him as a customer, while also making thoughtful changes to expand the bakery’s offerings and enhance its reputation within the community.

    The bakery, originally opened in January 2017 by a retired French couple, quickly became a beloved spot for locals to enjoy authentic French pastries. Dave and his wife, both Francophiles with a deep appreciation for French culture and cuisine, discovered the bakery in 2020 and were immediately hooked. “We thought these were the best pastries we’d found anywhere outside of France,” Dave said, recalling their early visits. When the opportunity arose to purchase the bakery, they jumped at the chance, driven by their love for the place and a vision to keep it thriving.

    Initially, the plan was to maintain the bakery as it was—same recipes, same bakers, and the same charming atmosphere that had won over so many loyal customers. But as Dave quickly learned, there was room for improvement, especially on the business side. “They made great pastries, but they didn’t know how to run a business,” Dave explained. He and his wife set to work on improving operations, expanding the menu, and making the café more comfortable and inviting for guests.

    One of the first major changes Dave implemented was a menu expansion. While the previous owners had focused primarily on pastries, Dave saw an opportunity to elevate the café’s other offerings. “The key to a good sandwich is the bread,” Dave noted, emphasizing the high-quality French sourdough that the bakery is known for. The expanded menu now includes a variety of sandwiches, soups, salads, and even sourdough pizzas, which have become a customer favorite. The introduction of pizzas was particularly exciting for Dave, who highlighted how the French sourdough crust gives the pizza a unique flavor and texture.

    The bakery also added a breakfast menu, offering items such as crepes, waffles, and omelets. “Our crepes are really good,” Dave shared, and they have quickly become a popular choice among regulars. Fish and chips Fridays, another new addition, have also been well-received, alongside a rotating selection of soups, including favorites like red pepper gouda and lobster bisque.

    Despite the challenges of running a bakery, Dave’s enthusiasm for creating a welcoming environment shines through. “We wanted this place to be a comfortable spot where people can relax, have a cappuccino, a croissant, or a sandwich,” he said. To achieve this, the interior has been updated with cozier seating and a more inviting ambiance. “It feels much more comfortable now, and that’s been a big part of creating a better experience for our customers.”

    One of the aspects Dave is most proud of is the team he’s built over the past two years. “We have an amazing team here, and it really feels like a family,” he said. Many of the bakery’s original employees, including head baker Tony, have stayed on, bringing years of expertise and dedication to the operation. Together, they’ve worked hard to maintain the quality of the bakery’s core offerings, especially the French pastries that originally drew Dave and his wife to O Happy Bread.

    “Authenticity is very important to me,” Dave explained. He is committed to preserving the traditional French recipes, translating them from French to English for the benefit of his staff, but never sacrificing the quality that makes the bakery special. From beignets to turnovers and croissants, the bakery’s most popular pastries remain a cornerstone of the menu. “We’ll never cut corners or use inferior ingredients,” Dave added, underscoring his dedication to maintaining high standards.

    Beyond its regular menu, O Happy Bread offers seasonal items throughout the year. With fall approaching, customers can look forward to the addition of pumpkin-spiced treats, followed by a variety of pies for Thanksgiving and festive pastries for the holiday season. “Our bakers are incredibly creative, and I get to be the taste tester,” Dave said with a smile.

    In addition to its daily offerings, O Happy Bread provides catering for corporate events, employee appreciation, and other special occasions. The bakery can accommodate large orders, offering sandwich trays, boxes of pastries, and more. “We have the equipment to produce much more than we do on a typical day,” Dave said, encouraging customers to consider the bakery for their next event.

    Community involvement is another area where O Happy Bread continues to grow. The bakery will be hosting its annual trunk-or-treat event, inviting families to decorate their cars and participate in a festive contest. There will be a costume contest with prizes for different age groups, and the bakery will set up a barbecue, offering burgers and hot dogs served on their signature brioche buns. “It’s a great way to bring the community together,” Dave said, looking forward to the event.

    Looking ahead, Dave’s vision for O Happy Bread is simple: to continue growing while staying true to its roots. “I really do love this place,” he shared. “It’s a special spot, and we’re just trying to make it even better.” With a focus on quality, community, and an ever-evolving menu, O Happy Bread is well on its way to becoming a must-visit destination in Pahrump for both locals and visitors alike.
